Flaky whole-wheat flatbreads stuffed with spiced potato, best eaten hot off the tawa with a knob of white butter.

Ingredients
- wheat flour (atta)2 cup
- potatoes4 no.
- green chilli2 no.
- ginger1 tsp
- red chilli powder1 tsp
- amchur1 tsp
- garam masala1/2 tsp
- jeera1/2 tsp
- coriander3 tbsp
- ghee3 tbsp
- salt1.5 tsp
Method
- 1Knead the atta with water and a little salt into a soft dough and rest it. · 8m
- 2Boil, peel and mash the potatoes, then mix in green chilli, ginger, red chilli powder, amchur, garam masala, jeera, coriander and salt. · 8m
- 3Roll a ball of dough, place a spoon of filling in the centre, seal it and gently roll into a paratha. · 3m
- 4Cook on a hot tawa, smearing ghee on both sides until golden brown spots appear. · 4m
- 5Repeat for the rest and stack them warm. · 4m
- 6Serve hot with curd, butter and pickle. · 1m
