Aloo Posto

A soul-satisfying Bengali dish of potatoes coated in a nutty poppy-seed paste, finished with raw mustard oil.

Ingredients

  • potato4 no.
  • poppy seeds (posto)4 tbsp
  • green chilli3 no.
  • nigella seeds (kalonji)1/2 tsp
  • haldi1/4 tsp
  • mustard oil3 tbsp
  • salt1 tsp

Method

  1. 1Soak the poppy seeds in warm water for 15 minutes, then grind to a smooth paste with two green chillies. · 5m
  2. 2Cut the potatoes into small cubes. · 4m
  3. 3Heat mustard oil until smoking, cool slightly, then splutter nigella seeds and slit green chilli. · 3m
  4. 4Add the potato and haldi and saute for a few minutes. · 4m
  5. 5Add the poppy-seed paste with salt and a little water, cover and cook until the potatoes are soft. · 10m
  6. 6Drizzle a spoon of raw mustard oil over the top and serve with steamed rice. · 1m
