Egg Curry

Boiled eggs simmered in a spiced onion-tomato gravy that turns a handful of eggs into a hearty meal.

Ingredients

  • eggs6 no.
  • onion2 no.
  • tomato2 no.
  • ginger garlic paste1 tbsp
  • green chilli1 no.
  • jeera1 tsp
  • haldi1/2 tsp
  • red chilli powder1.5 tsp
  • coriander powder1 tbsp
  • garam masala1/2 tsp
  • oil3 tbsp
  • coriander (optional)2 tbsp
  • salt1 tsp

Method

  1. 1Boil the eggs, cool, peel and make shallow slits on each. · 10m
  2. 2Fry the eggs with a little haldi and red chilli powder until lightly golden, then set aside. · 4m
  3. 3Splutter jeera in oil, then saute onion, ginger garlic paste and green chilli until golden. · 5m
  4. 4Add tomato with the spice powders and salt and cook until the oil separates. · 6m
  5. 5Pour in a cup of water for a gravy and bring to a simmer. · 4m
  6. 6Add the fried eggs, simmer for a few minutes, finish with garam masala and coriander, and serve with rice. · 4m
