A tangy, aromatic lentil and vegetable stew that ties an entire South Indian meal together.

Ingredients

  • toor dal1 cup
  • tamarind1 tbsp
  • sambar powder2 tbsp
  • mixed vegetables2 cup
  • tomato1 no.
  • shallots10 no.
  • haldi1/2 tsp
  • mustard seeds1 tsp
  • curry leaves1 sprig
  • hing1 pinch
  • dry red chilli2 no.
  • oil2 tbsp
  • coriander (optional)2 tbsp
  • salt1.5 tsp

Method

  1. 1Pressure cook the toor dal with haldi until soft, then mash it smooth. · 12m
  2. 2Soak tamarind in warm water and extract the pulp. · 3m
  3. 3Simmer the mixed vegetables, shallots and tomato in the tamarind water with sambar powder and salt until tender. · 10m
  4. 4Stir in the mashed dal with a little water and let it come to a gentle boil. · 5m
  5. 5Temper mustard seeds, dry red chilli, hing and curry leaves in oil and pour over the sambar. · 3m
  6. 6Garnish with coriander and serve hot with rice or idli. · 1m
