Potatoes4 medium-sized
Ginger1 inch
Garlic4 cloves
Green Chilies4 pieces
Coriander Leaves1/2 cup
Turmeric Powder1/2 teaspoon
Mustard Seeds1/2 teaspoon
Curry Leaves10 leaves
Besan (Gram Flour)1 cup
Baking Soda1/4 teaspoon

Pav Buns8 pieces
Tamarind1 tablespoon
Jaggery1 tablespoon
Mint Leaves1/4 cup
Cumin Seeds1/2 teaspoon
Lemon Juice1 tablespoon
Method
1Boil the potatoes until soft, peel and mash them. · 10m
2Grind ginger, garlic, and 2 green chilies into a paste. · 5m
3Heat 1 tablespoon oil in a pan, add mustard seeds, let them splutter. · 2m
4Add curry leaves and the ginger-garlic-chili paste, sauté for 2 minutes. · 2m
5Add turmeric powder, mashed potatoes, and salt. Mix well and cook for 5 minutes. Let it cool. · 5m
6Shape the potato mixture into 8 equal balls. · 5m
7In a bowl, mix besan, baking soda, salt, and enough water to make a thick batter. · 5m
8Heat oil in a deep pan for frying. · 5m
9Dip each potato ball in the batter and deep fry until golden brown. Drain on paper towels. · 10m
10For green chutney, blend coriander leaves, mint leaves, 2 green chilies, cumin seeds, tamarind, jaggery, salt, and lemon juice into a smooth paste. · 5m
